Donna Jean's Killer Zucchini Bread
6 egg whites or 3 eggs
1/2 cup oil
2 cups sugar
2 cups grated zucchini
1 cup crushed pineapple, well drained
1/2 cup walnut or pecans (optional)
3 tea vanilla
3 cup flour
1/2 tea salt
3 tea cinnamon
1 1/2 tea baking powder
1 1/2 tea soda
1. Mix eggs, sugar, and oil together.
2. Add zucchini, pineapple, nuts and vanilla
3. In a different bowl shift together all dry ingredients and stir into wet mixture.
4. Blend well.
5. Pour into loaf pans
6. Bake at 325 for 60 mins - if cupcakes for 30 mins
